Turkey Meatloaf and Mashed Sweet Potatoes

Turkey Meatloaf


2 lbs Lean Ground Turkey
2 tsp Righteously Spiced Backyard Burger Seasoning (or comparable burger seasoning)
1/4 cup yellow onions, chopped
1/4 cup green peppers, chopped
3 tbsp liquid egg whites
3 tbsp oat flour
1 tbsp yellow mustard
1 tsp Worcestershire
1 tsp A1 sauce
3 slices white bread


Mix all ingredients together in a large bowl EXCEPT white bread. Spray loaf pan with non-stick spray. Line bottom of the loaf pan with white bread slices. Place meat mixture in loaf pan (pack it in) and cover with foil. Cook for 15 mins at 350 degrees. Remove foil top and cook for another 45 mins. Cut into the meatloaf to check for doneness. Let cool and flip out of the loaf pan. remove grease-soaked bread and discard. Cut into slices and serve.

Mashed Sweet Potatoes


7 medium to large sweet potatoes*
1/2 tsp cinammon
1/2 tsp allspice or Pumpkin Pie spice
1/4 cup Original Almond Milk (adjust for your desired level of creaminess)
1 tablespoon turbinado cane sugar
1 tbsp liquid egg white

Bake sweet potatoes in oven 400 degrees, individually wrapped in foil, until tender (about 45 min- 1hour). Let potatoes cool and remove skin. Using a hand mixer or a masher, blend/mash potatoes and add all ingredients. Add more milk if necessary. Place mixture in greased casserole dish and bake at 400 degrees for 10 mins.
