Makes 12 muffins
- 2 cartons liquid egg whites or 12 large eggs
- Everything But the Kitchen Sink Seasoning, to taste
- 2 cups baby spinach
- 2 tbsp chopped fresh cilantro
- 1/2 cup chopped tomatoes
- Preheat oven to 350°
- Whisk eggs together in a bowl.
- Add spinach, tomatoes, and cilantro and stir.
- Spray muffin tin with nonstick spray; evenly distribute egg batter in tin; sprinkle with seasoning
- Place tin in oven and cook for 30 minutes
